
Crispy potato bites
Diced, boil and bake for a crispy snack!

Ingredients
- russet potato peeled: 1 medium
- baking soda: 1 tsp
- olive oil: 1/2 tbs
- salt: 1 tsp
- pepper: 1 tsp
- paprika: 2 tsp
- garlic powder: 2 tsp
Instructions
- Step 1: Preheat oven to 425f.
- Step 2: Peel and dice a medium russet potato (about 1 inch cube-ish)
- Step 3: In a pan with enough water to cover the diced potato add the baking soda. The baking soda will break the potato down a little more.
- Step 4: Boil for about 6 minutes or until fork tender.
- Step 5: Drain water or remove from water
- Step 6: In a container with a lid, place the cubed potato pieces and shake a few times. This will roughen up the potatoes for extra crispiness.
- Step 7: In the same container drizzle a little olive oil and add the spices (add whatever spices you want).
- Step 8: Place lid back on and shake a few times more to coat potatoes.
- Step 9: Spay a baking sheet with oil
- Step 10: Place the bites spaced out on the pan.
- Step 11: Cook for about 15-20 minutes at 425f
