
Home-made Tomato Soup
Easy to make tomato soup! Use up those tomatoes you bought!

Ingredients
- Tomatoes: 6 medium
- whole garlic bulb: 1/2 bulb
- bell pepper (yellow, green, or red): 1
- Heavy cream or boil down 1 cup of milk: 1/2 cup
- Fresh basil (optional): 5 leaves
Instructions
- Step 1: Preheat oven to 350°f
- Step 2: On a baking sheet add whole tomatoes, halved pepper, and the garlic with the pointy tops cut off.
- Step 3: Drizzle a little olive oil over the vegetables
- Step 4: sprinkle some salt over too
- Step 5: roast in oven for about 20-30 mins or until they get a little browned and garlic is soft (skin on tomatoes will crack)
- Step 6: Remove from pan and place all tomatoes, pepper, squeezed or removed garlic cloves, and the basil leaves into a blender
- Step 7: Blend until smooth, if using basil you will see the basil as little 'sprinkles'
- Step 8: I like to add back to a pot and add the heavy cream here. You can just serve it out of the blender and mix a little cream in too.
- Step 9: This will be a sweet and savory dish - the roasted garlic adds a wonderful depth to it!
- Step 10: Enjoy with crackers or GRILLED CHEESE!!
